Executive chef Sonya Cote's cuisine has been described as rustic French with a soul food flare. She supports the local food movement, buying products from Texas farms. These raw ingredients arrive fresh daily, delivered by farmers themselves which create an ever changing menu based upon seasonal availability. Sonya's localvore practices use most or all parts of farm products, including breaking down whole fish & animals for delectables such as our charcuterie, stocks, soups, condiments & sauces.
Sonya and her cooks prepare the menu fresh everyday in the E.S.S.R.'S petite, intimate, open kitchen.
